A New Mexican Restaurant is Coming to Albertville

Work crews are remodeling the former location of Carbone's and Jimmy's Pizza.

The former Carbone’s and Jimmy’s Pizza location will be getting a south-of-the-border flavor starting mid-August.

The new Mexican restaurant, El Bamba, will open for business on the corner of County Road 37 and Main Avenue in Albertville.

The restaurant's owners are a trio of St. Michael siblings: Jose, Cesar and Marlen Lopez.

El Bamba will be drive-through, eat-in and take-out restaurant with a menu that features authentic Mexican food and specializes in large, California-style burritos. Jose said the drive-through would be similar to a Culver’s style set-up, where it takes a little bit longer to receive an order than a standard fast-food restaurant because their food is made fresh.

Jose said his family has lived in St. Michael for more than five years now, and the family is looking forward to serving their local community. He said they enjoy the friendly community and his two children attend school locally, so having a restaurant in Albertville is a good fit for them. The siblings currently operate two other Mexican restaurants: Rancho Grande in Buffalo for the past 10 years and Mucho Loco in Elk River for three years. They also formerly owned the Rancho Grande restaurant in Albertville.

Jose said restaurant patrons could expect to see a new interior and authentic fare when they visit El Bamba, which is currently undergoing a major renovation and will open about three weeks from now.

“We are excited to be serving everyone from the local area,” Jose said.
